Our prime beef is sourced from UK based farms, then selected for marbling and dry aged in speciality air controlled Dry Aging chambers for between 21-28 days. This gives the natural enzymes in the meat time to break down the muscle tissues which renders the beef more tender along with concentrating the already mouth watering flavour our prime beef has. 
Cooking recommendations; 
Season with salt and pepper or your favourite barbecue rub. Sear each side at a high temperature until the desired internal temperature is reached.
